Lately we’ve made a big effort to try some new recipes here at the Stumble Dome. The theory is straightforward enough: cook better, eat better and maybe drop a few pounds. I thought I would share a few recipes this week along with some brief comments and links. These are easy to make and quick enough to use during the week. Take a look and maybe take a couple for a test drive.

No Bake Nutella Protein Bites
The Nutella bites top the list because they are super easy to make and incredibly versatile. Need a quick breakfast on the go or a post-workout snack. They’ve got you covered. Tips: Go ahead and mix them by hand to really incorporate the ingredients. Also make them 2/3 to half of the size indicated in the recipe so you can just pop them in your mouth. Otherwise you will arrive at work covered with crumbs. You can ask my coworkers.
Chicken and Black Bean Stuffed Burritos
This recipe turns leftover rotisserie chicken into a quick and tasty dinner, and you probably have most of the ingredients on hand.
Prosciutto Wrapped Chicken with Sautéed Spinach
The prosciutto really adds flavor to the chicken thighs and the sauteed spinach adds a quick tasty vegetable and color. I’m told that color is really important. I don’t know why.
Crockpot Chicken Sweet Potatoes
This is an easy, make-ahead meal with plenty of nutrition. We substituted raspberry preserves instead of peach or apricot. It was very good. Next time I’m thinking about trying the apricot. Substituting different preserves makes it easy to mix it up with this recipe. Experiment.
Chicken Mushroom Potpie
The refrigerated pie crust dough makes this one easy. It takes a bit more prep work that the other recipes but gives that comfort food feeling.
Hawaiian Chicken
This recipe looks very good on paper but I felt it came up short. It needs something.
Baked Coconut Chicken
This recipe just seemed a bit bland. I can’t decide if it needs something or just a different proportion of spices. It may just be too healthy for my taste.
So there you have it. Several hits and a couple misses in the never-ending search for delicious healthy meals. Stumble onward!
General FYI to make this healthier: You might try using Nathan’s chocolate hazelnut spread instead of Nutella. It still has that great flavor, but with HALF the sugar.
